Ingredients
16oz plain yogurt
1 tsp baking powder
3 cups of sugar
4 cups of flour
6 tbsp vegetable oil
1 tbsp cinnamon
4 shredded gala apples
1 cup chopped walnuts
Overview
My verdict for this recipe was fail but my generous significant other and a few friends are surprisingly passionate about convincing me it was beyond great. So, if you like apple and cakes that are not too sweet, this is a great fit for you!
Directions
Pre-heat oven to 350 degrees. In a large mixing bowl, combine yogurt and baking powder. Then slowly beat in sugar until well combined. Next, add flour and oil until well combined as well. Once all ingredients have a consistent texture, add cinnamon and shredded apples. I made sure I squeezed out as much water out of those apples as I could before mixing them in. Once you pour into an 11" baking pan, sprinkle with walnuts on top. Bake for 45 minutes or until a toothpick comes out clean!
My Guesses / Oopses
- Amount of yogurt - the recipe calls for a "jar of yogurt" which is rather vague.... I eyeballed it to about 16oz. I think it worked but it could probably take a bit less than that.
- Types of apples and amount of apples - I think the apples my mom used are rather tiny. American apples are GARGANTUAN. In addition, Bulgarian apples are typically golden or red delicious which is what I assume my mom used. I picked up gala... so I am not sure what switching up the apples would do..
- When to add cinnamon - in fact, I completely forgot until I was about ready to stick the cake in the oven. How to fix that? Just sprinkle it all over! I am sure this did not help the taste. But it certainly made it look good!
To summarize, I'd call this recipe a miss with potential. So far, we are 1 : 1 in this challenge. For next week, I am determined to make baklava. I just have to run an extra 10 miles in preparation... that should do it, right?
A few months back, a co-worker of mine convinced me to join my company's Spartan Race team. He didn't talk it up much: he mentioned it's a long-ish run with a few fun obstacles. You know, no big deal. Something someone who runs as much as me should complete more than easily (read, you don't really need to train for it). Ha ha ha.
