Ingredients
5 eggs
1/2 cup butter
1 and 1/2 cups of flour
1/4 tsp baking powder
1 cup chopped walnuts
1 lemon's zest
1 cup powder sugar
1 tsp powder vanilla
Overview
A very easy-to-make cake that is fast, fresh and VERY tasty. Prep time is about 10 minutes, bake time is about 30 minutes.
Instructions
Preheat oven to 350 degrees. Spread melted butter on baking pan and set aside.
Using a hand-held mixer, beat eggs and sugar until well combined. Add melted butter, flour, baking powder and lemon zest and combine well. Finally, add in walnuts.
Pour mixture into pan and bake for 25 - 30 minutes or until a toothpick comes out clean (it should have a healthy golden look to it).
While the cake is still warm, use a glass to cut out half-moon shapes (I used my Ikea champaign glass for that and it was perfect!). Immediately after cutting each shape, dip it into a mixture of the powder sugar and vanilla powder and you are done!
What were my guesses this time around?
- Baking temperature - none listed, I guessed 350 and it worked!
- Baking time - none listed, I set the timer for 20 minutes, checked on it and let it bake for another 5.
- Baking powder - the recipe didn't call for any but I thought it would be too dense without... mistake? Not sure, but they certainly taste DELICIOUS as described above.
Verdict? - AWESOME. Will make again.
A few months back, a co-worker of mine convinced me to join my company's Spartan Race team. He didn't talk it up much: he mentioned it's a long-ish run with a few fun obstacles. You know, no big deal. Something someone who runs as much as me should complete more than easily (read, you don't really need to train for it). Ha ha ha.
